Dom. de Fondrèche Côtes du Ventoux "Persia" (White) 2021

Nestled in the valley below the famous Tour de France mountain Mt. Ventoux, the energetic and extremely talented Sébastien Vincenti makes a range of biodynamic wines with stunningly purity and concentration at his estate, Domaine de Fondrèche.

Sébastien's Persia Blanc is made from 100% old vine Roussanne, fermented in barrel and then aged in concrete before bottling.  Clear with bright green reflections in the glass, the nose exhibits white stone fruits, white flowers and a touch of honey.  The mouthfeel is rich and textured but surprisingly fresh with a hint of saline.
