Dom. La Collière Rasteau "La Fontaine" 2012

64% Grenache, 13% Syrah, 13% Mourvedre

Manually harvested to allow selective sorting, 90% of the vinification is whole-bunch with airless delestage followed by classic pumping-over and 11-day vatting.  The cuvée, which had its first vintage in 2008, showcases the terroir of a selection of parcels within the Domaine.  In the midst of these parcels flows a fountain, hence the obvious choice for the wine's name.

A deep garnet-red colour with ruby highlights, the nose is airy and quickly develops notes of red fruit and sweet spices.  The palate does not disappoint with aromas of sweet spices following on from the nose.  Beautiful tannins add velvetiness add to the mid-palate and finish. The finish is long and well-balanced, without heaviness.

Its spicy notes have developed with age.  Pair it with red meats or grilled lamb with herbs.
